Ingredients

  • Corn masa harina - 1 cup
  • Water - 3/4 cup
  • Black beans (cooked and mashed) - 1 cup
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Fresh cilantro (chopped) - 1/4 cup
  • Radishes (thinly sliced) - 1/2 cup
  • Avocado (sliced) - 1 small
  • Lime (cut into wedges) - 1

Steps

  1. In a mixing bowl, combine corn masa harina and water until a soft dough forms. Divide the dough into 4 equal portions and shape each portion into a thick oval tortilla (about 1/2 inch thick).
  2. Heat a non-stick skillet over medium heat. Cook each tortilla for about 2-3 minutes on each side until lightly browned and cooked through. Remove from skillet and keep warm.
  3. In the same skillet, add olive oil and minced garlic; sauté for 1 minute until fragrant. Stir in the mashed black beans, cumin, salt, and pepper. Cook for another 3-5 minutes until heated through.
  4. Spread a generous layer of the black bean mixture on each tortilla. Top with chopped cilantro, sliced radishes, and avocado.
  5. Serve warm with lime wedges on the side for squeezing over the top.
