Ingredients

  • 2 ripe avocados
  • 1 medium tomato, diced
  • 1 small red onion, finely chopped
  • 1 lime, juiced
  • 1 small jalapeño, seeds removed and minced
  • Cilantro - a handful, chopped
  • Salt - to taste
  • 80g corn tortillas
  • 1 tablespoon olive oil

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the corn tortillas into triangles and place them on a baking tray.
  3. Drizzle the olive oil over the tortilla triangles and sprinkle with a pinch of salt.
  4. Bake the tortillas in the oven for about 10-12 minutes, or until they are golden and crispy.
  5. While the totopos are baking, cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.
  6. Mash the avocados with a fork until smooth but still slightly chunky.
  7. Add the diced tomato, chopped onion, minced jalapeño, lime juice, and chopped cilantro to the bowl.
  8. Season with salt to taste and mix everything together until well combined.
  9. Once the totopos are ready, remove them from the oven and let them cool slightly.
  10. Serve the guacamole in a bowl alongside the crispy totopos.
