- 2 ripe avocados
- 1 medium tomato, diced
- 1 small red onion, finely chopped
- 1 lime, juiced
- 1 small jalapeño, seeds removed and minced
- Cilantro - a handful, chopped
- Salt - to taste
- 80g corn tortillas
- 1 tablespoon olive oil
Steps
- Preheat the oven to 180°C (350°F).
- Cut the corn tortillas into triangles and place them on a baking tray.
- Drizzle the olive oil over the tortilla triangles and sprinkle with a pinch of salt.
- Bake the tortillas in the oven for about 10-12 minutes, or until they are golden and crispy.
- While the totopos are baking, cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.
- Mash the avocados with a fork until smooth but still slightly chunky.
- Add the diced tomato, chopped onion, minced jalapeño, lime juice, and chopped cilantro to the bowl.
- Season with salt to taste and mix everything together until well combined.
- Once the totopos are ready, remove them from the oven and let them cool slightly.
- Serve the guacamole in a bowl alongside the crispy totopos.
