Ingredients

  • Nopal cactus pads - 150 grams
  • Masa harina - 100 grams
  • Water - 120 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Queso fresco - 50 grams, crumbled
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Rinse the nopal cactus pads under cold water, then remove the thorns with a knife and chop them into small pieces.
  3. In a skillet, heat the olive oil over medium heat, add the chopped nopal, and sauté for about 5 minutes until they soften. Set aside to cool slightly.
  4. In a mixing bowl, combine the masa harina, salt, and water. Knead until you form a soft dough.
  5. Add the sautéed nopal, crumbled queso fresco, and chopped cilantro to the dough, mixing until evenly incorporated.
  6. Divide the dough into 4 equal portions and shape each portion into a thick disc (gordita).
  7. Place the gorditas on a baking tray lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes, or until they are lightly golden and cooked through.
  9. Remove from the oven and squeeze fresh lime juice over the top before serving.
