- Nopal cactus pads - 150 grams
- Masa harina - 100 grams
- Water - 120 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Queso fresco - 50 grams, crumbled
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Preheat your oven to 200°C (400°F).
- Rinse the nopal cactus pads under cold water, then remove the thorns with a knife and chop them into small pieces.
- In a skillet, heat the olive oil over medium heat, add the chopped nopal, and sauté for about 5 minutes until they soften. Set aside to cool slightly.
- In a mixing bowl, combine the masa harina, salt, and water. Knead until you form a soft dough.
- Add the sautéed nopal, crumbled queso fresco, and chopped cilantro to the dough, mixing until evenly incorporated.
- Divide the dough into 4 equal portions and shape each portion into a thick disc (gordita).
- Place the gorditas on a baking tray lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until they are lightly golden and cooked through.
- Remove from the oven and squeeze fresh lime juice over the top before serving.
