- Corn masa harina - 200 grams
- Water - 150 milliliters
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Refried black beans - 100 grams
- Queso fresco - 50 grams, crumbled
- Avocado - 1 small, sliced
- Tomato - 1 small, diced
- Red onion - 1/4, finely chopped
- Cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- In a mixing bowl, combine the corn masa harina, water, and salt until a smooth dough forms.
- Divide the dough into 4 equal portions and shape each portion into a thick disc about 1.5 cm (0.5 inch) thick.
- Heat a skillet over medium heat and add olive oil. Cook the gorditas for about 5 minutes on each side or until golden brown and cooked through.
- While the gorditas are cooking, prepare the toppings by mixing the diced tomato, red onion, and cilantro in a bowl.
- Once the gorditas are cooked, slice them open and spread the refried black beans inside.
- Top with crumbled queso fresco, avocado slices, and the tomato-onion-cilantro mixture.
- Serve warm with lime wedges on the side.
