  • Coconut sugar - 50 grams
  • Coconut oil - 50 grams (melted)
  • Almond milk - 50 ml
  • Ground cinnamon - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a food processor, blend the walnuts until they reach a fine meal consistency.
  3. In a mixing bowl, combine the walnut meal, all-purpose flour, coconut sugar, ground cinnamon, baking powder, and salt.
  4. In another bowl, whisk together the melted coconut oil, almond milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until combined, forming a dough.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 5 cm apart.
  7. Flatten each cookie slightly with the back of a fork or your fingers.
  8. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
