- Salt - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a food processor, blend the walnuts until they reach a fine meal consistency.
- In a mixing bowl, combine the walnut meal, all-purpose flour, coconut sugar, ground cinnamon, baking powder, and salt.
- In another bowl, whisk together the melted coconut oil, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until combined, forming a dough.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 5 cm apart.
- Flatten each cookie slightly with the back of a fork or your fingers.
- Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
