Ingredients

  • Pinto beans - 200 grams (soaked overnight)
  • Bacon - 100 grams, diced
  • Chorizo - 50 grams, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Jalapeño - 1, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Chicken broth - 500 ml
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Drain and rinse the soaked pinto beans, then place them in a pot with the chicken broth. Bring to a boil, then reduce heat and simmer for about 30 minutes until beans are tender.
  2. In a separate skillet, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pan.
  3. In the same skillet, add the diced chorizo and cook until browned. Add the chopped onion, minced garlic, and chopped jalapeño, cooking until the onion is translucent.
  4. Stir in the diced tomato and cook for an additional 5 minutes, allowing the flavors to meld.
  5. Once the beans are cooked, add the bacon, chorizo mixture, and chopped cilantro to the pot. Season with salt and pepper to taste, and simmer for another 5-10 minutes.
  6. Serve hot with lime wedges on the side.
