- Pinto beans - 200 grams (soaked overnight)
- Bacon - 100 grams, diced
- Chorizo - 50 grams, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Jalapeño - 1, finely chopped
- Cilantro - 2 tablespoons, chopped
- Chicken broth - 500 ml
- Lime - 1, cut into wedges
- Salt - to taste
- Pepper - to taste
Steps
- Drain and rinse the soaked pinto beans, then place them in a pot with the chicken broth. Bring to a boil, then reduce heat and simmer for about 30 minutes until beans are tender.
- In a separate skillet, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pan.
- In the same skillet, add the diced chorizo and cook until browned. Add the chopped onion, minced garlic, and chopped jalapeño, cooking until the onion is translucent.
- Stir in the diced tomato and cook for an additional 5 minutes, allowing the flavors to meld.
- Once the beans are cooked, add the bacon, chorizo mixture, and chopped cilantro to the pot. Season with salt and pepper to taste, and simmer for another 5-10 minutes.
- Serve hot with lime wedges on the side.
