- Carrot - 100 grams, grated
- Bell pepper - 50 grams, diced
- Onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1, sliced (for serving)
- Salsa - 100 grams (for serving)
Steps
- In a skillet, heat the olive oil over medium heat, then add the onion and garlic, sautéing until fragrant and softened, about 3 minutes.
- Add the zucchini, carrot, and bell pepper to the skillet and cook for another 5-7 minutes until the vegetables are tender.
- Stir in the cumin, paprika, salt, black pepper, and chopped cilantro, and cook for an additional 2 minutes. Remove from heat and let the filling cool slightly.
- Warm the corn tortillas on a skillet or microwave until pliable. Place about 2 tablespoons of the vegetable filling in the center of each tortilla and roll tightly to form flautas.
- In a deep skillet, heat oil over medium-high heat. Fry the flautas in batches for 2-3 minutes on each side, until golden brown and crispy. Drain on paper towels.
- Serve the flautas hot with sliced avocado and salsa on the side.
