  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1, sliced (for serving)
  • Salsa - 100 grams (for serving)

Steps

  1. In a skillet, heat the olive oil over medium heat, then add the onion and garlic, sautéing until fragrant and softened, about 3 minutes.
  2. Add the zucchini, carrot, and bell pepper to the skillet and cook for another 5-7 minutes until the vegetables are tender.
  3. Stir in the cumin, paprika, salt, black pepper, and chopped cilantro, and cook for an additional 2 minutes. Remove from heat and let the filling cool slightly.
  4. Warm the corn tortillas on a skillet or microwave until pliable. Place about 2 tablespoons of the vegetable filling in the center of each tortilla and roll tightly to form flautas.
  5. In a deep skillet, heat oil over medium-high heat. Fry the flautas in batches for 2-3 minutes on each side, until golden brown and crispy. Drain on paper towels.
  6. Serve the flautas hot with sliced avocado and salsa on the side.
