Ingredients

  • Potatoes - 400 grams
  • Corn tortillas - 4 pieces
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1, sliced
  • Salsa - for serving

Steps

  1. Peel and dice the potatoes, then boil them in salted water for about 15 minutes or until fork-tender.
  2. While the potatoes are boiling, heat 1 tablespoon of olive oil in a skillet over medium heat and sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
  3. Drain the boiled potatoes and mash them in a bowl. Add the sautéed onion and garlic, cumin, paprika, salt, black pepper, and chopped cilantro. Mix until well combined.
  4. Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
  5. Take a tortilla, place 2 tablespoons of the potato filling in the center, and roll it tightly into a flauta shape. Secure with a toothpick if necessary. Repeat with remaining tortillas and filling.
  6. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Fry the flautas for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove from the skillet and drain on paper towels. Serve hot with sliced avocado and salsa.
