Ingredients
- Corn tortillas - 4 units
- Canned black beans - 200 grams (drained and rinsed)
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons (chopped)
- Sour cream - 2 tablespoons (for serving)
- Avocado - 1 small (sliced, for serving)
- Lime - 1 (cut into wedges, for serving)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the drained black beans, cumin, chili powder, and salt to the skillet. Cook for another 5 minutes, mashing some of the beans with a fork to create a chunky filling.
- Remove the skillet from heat and stir in chopped cilantro.
- Warm the corn tortillas in a dry skillet or microwave to make them pliable.
- Place about 2 tablespoons of the bean mixture in the center of each tortilla and roll them tightly into a flauta shape.
- Place the flautas seam-side down on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes or until golden and crispy.
- Serve hot, garnished with slices of avocado, a dollop of sour cream, and lime wedges on the side.
