Ingredients

  • Corn tortillas - 4 units
  • Canned black beans - 200 grams (drained and rinsed)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Sour cream - 2 tablespoons (for serving)
  • Avocado - 1 small (sliced, for serving)
  • Lime - 1 (cut into wedges, for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
  3. Add the drained black beans, cumin, chili powder, and salt to the skillet. Cook for another 5 minutes, mashing some of the beans with a fork to create a chunky filling.
  4. Remove the skillet from heat and stir in chopped cilantro.
  5. Warm the corn tortillas in a dry skillet or microwave to make them pliable.
  6. Place about 2 tablespoons of the bean mixture in the center of each tortilla and roll them tightly into a flauta shape.
  7. Place the flautas seam-side down on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes or until golden and crispy.
  9. Serve hot, garnished with slices of avocado, a dollop of sour cream, and lime wedges on the side.
