Ingredients

  • Corn tortillas - 4 pieces
  • Black beans (cooked and mashed) - 1 cup
  • Onion (finely chopped) - 1/4 cup
  • Garlic (minced) - 1 clove
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Vegetable oil (for frying) - 1 cup
  • Fresh cilantro (chopped, for garnish) - 2 tablespoons
  • Sour cream (for serving) - 1/4 cup
  • Salsa (for serving) - 1/4 cup

Steps

  1. In a skillet over medium heat, add a tablespoon of vegetable oil and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  2. Add the mashed black beans, cumin, and salt to the skillet, stirring to combine and heating through for another 2-3 minutes.
  3. Remove the bean mixture from heat and let it cool slightly.
  4. Heat a small amount of oil in a separate pan over medium heat. Lightly fry each tortilla for about 15 seconds on each side until pliable, then remove and drain on paper towels.
  5. Place a spoonful of the bean mixture along one edge of each tortilla, roll them tightly, and secure with a toothpick if necessary.
  6. In the same skillet, add enough vegetable oil to cover the bottom and heat to 180°C (350°F). Fry the rolled flautas in batches for about 2-3 minutes on each side, or until golden brown and crispy.
  7. Remove from oil and drain on paper towels. Serve hot, garnished with fresh cilantro, sour cream, and salsa.
