- Corn tortillas - 4 pieces
- Black beans (cooked and mashed) - 1 cup
- Onion (finely chopped) - 1/4 cup
- Garlic (minced) - 1 clove
- Cumin powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Vegetable oil (for frying) - 1 cup
- Fresh cilantro (chopped, for garnish) - 2 tablespoons
- Sour cream (for serving) - 1/4 cup
- Salsa (for serving) - 1/4 cup
Steps
- In a skillet over medium heat, add a tablespoon of vegetable oil and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the mashed black beans, cumin, and salt to the skillet, stirring to combine and heating through for another 2-3 minutes.
- Remove the bean mixture from heat and let it cool slightly.
- Heat a small amount of oil in a separate pan over medium heat. Lightly fry each tortilla for about 15 seconds on each side until pliable, then remove and drain on paper towels.
- Place a spoonful of the bean mixture along one edge of each tortilla, roll them tightly, and secure with a toothpick if necessary.
- In the same skillet, add enough vegetable oil to cover the bottom and heat to 180°C (350°F). Fry the rolled flautas in batches for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove from oil and drain on paper towels. Serve hot, garnished with fresh cilantro, sour cream, and salsa.
