Ingredients

  • Eggs - 2 large
  • Heavy cream - 200 ml
  • Unsweetened almond milk - 100 ml
  • Erythritol - 50 g
  • Vanilla extract - 1 tsp
  • Salt - 1/4 tsp
  • Butter - for greasing

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, whisk together the eggs, heavy cream, almond milk, erythritol, vanilla extract, and salt until smooth and well combined.
  3. Grease two ramekins with butter to prevent sticking.
  4. Pour the flan mixture evenly into the prepared ramekins.
  5. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins, creating a water bath.
  6. Bake in the preheated oven for about 30-35 minutes, or until the flan is set and a toothpick inserted in the center comes out clean.
  7. Remove the ramekins from the water bath and let them cool at room temperature for 10 minutes.
  8. Refrigerate the flan for at least 2 hours before serving.
  9. To serve, run a knife around the edge of each ramekin and invert onto a plate.
