Ingredients
- Eggs - 2 large
- Heavy cream - 200 ml
- Unsweetened almond milk - 100 ml
- Erythritol - 50 g
- Vanilla extract - 1 tsp
- Salt - 1/4 tsp
- Butter - for greasing
Steps
- Preheat the oven to 160°C (320°F).
- In a mixing bowl, whisk together the eggs, heavy cream, almond milk, erythritol, vanilla extract, and salt until smooth and well combined.
- Grease two ramekins with butter to prevent sticking.
- Pour the flan mixture evenly into the prepared ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins, creating a water bath.
- Bake in the preheated oven for about 30-35 minutes, or until the flan is set and a toothpick inserted in the center comes out clean.
- Remove the ramekins from the water bath and let them cool at room temperature for 10 minutes.
- Refrigerate the flan for at least 2 hours before serving.
- To serve, run a knife around the edge of each ramekin and invert onto a plate.
