Ingredients
- Coconut milk - 200 ml
- Eggs - 2 large
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Cornstarch - 1 tablespoon
- Coconut sugar - 2 tablespoons
- Shredded unsweetened coconut - 2 tablespoons
- Pinch of salt
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, whisk together the eggs, honey, vanilla extract, and a pinch of salt until well combined.
- In a saucepan over medium heat, combine the coconut milk and coconut sugar. Stir until the sugar is dissolved and the mixture is warm, but do not let it boil.
- Gradually pour the warm coconut milk mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.
- Sift in the cornstarch and mix until fully incorporated. Fold in the shredded coconut.
- Pour the mixture into two individual ramekins or a small baking dish.
- Place the ramekins in a baking dish and pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.
- Bake for 30-35 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove from the oven and let cool at room temperature before refrigerating for at least 2 hours.
- To serve, run a knife around the edges and invert onto a plate.
