Ingredients

  • Ripe avocado - 1 medium (about 150g)
  • Coconut milk - 200 ml
  • Maple syrup - 3 tablespoons
  • Agar-agar powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Pinch of salt - 1

Steps

  1. In a blender, combine the ripe avocado, coconut milk, maple syrup, vanilla extract, lime juice, and a pinch of salt. Blend until smooth and creamy.
  2. In a small saucepan, mix the agar-agar powder with 100 ml of coconut milk. Heat over medium heat, stirring constantly until it comes to a gentle boil, and let it simmer for about 2 minutes until the agar-agar is fully dissolved.
  3. Pour the agar-agar mixture into the blender with the avocado mix and blend again until well combined.
  4. Pour the mixture into two small ramekins or dessert cups and refrigerate for at least 2 hours or until set.
  5. Once set, run a knife around the edges of the ramekins and invert onto a plate to serve. Optionally, garnish with fresh lime zest or coconut flakes.
