- Ripe avocado - 1 medium (about 150g)
- Coconut milk - 200 ml
- Maple syrup - 3 tablespoons
- Agar-agar powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Lime juice - 1 tablespoon
- Pinch of salt - 1
Steps
- In a blender, combine the ripe avocado, coconut milk, maple syrup, vanilla extract, lime juice, and a pinch of salt. Blend until smooth and creamy.
- In a small saucepan, mix the agar-agar powder with 100 ml of coconut milk. Heat over medium heat, stirring constantly until it comes to a gentle boil, and let it simmer for about 2 minutes until the agar-agar is fully dissolved.
- Pour the agar-agar mixture into the blender with the avocado mix and blend again until well combined.
- Pour the mixture into two small ramekins or dessert cups and refrigerate for at least 2 hours or until set.
- Once set, run a knife around the edges of the ramekins and invert onto a plate to serve. Optionally, garnish with fresh lime zest or coconut flakes.
