Ingredients

  • Fideo pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the diced bell pepper and zucchini, cooking for about 5 minutes until slightly softened.
  4. Add the diced tomato, cumin, smoked paprika, chili powder, salt, and black pepper. Cook for an additional 3 minutes, stirring occasionally.
  5. Add the fideo pasta to the skillet, stirring to combine with the vegetables and spices.
  6. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to a simmer and cover the skillet.
  7. Cook for about 10-12 minutes, or until the pasta is tender and has absorbed most of the liquid, stirring occasionally to prevent sticking.
  8. Once cooked, remove from heat and let sit for a couple of minutes. Fluff with a fork before serving.
  9. Garnish with fresh cilantro and serve hot.
