- Tomato sauce - 400 grams
- Chicken breast - 150 grams, cooked and shredded
- Vegetable broth - 500 ml
- Chili powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the fideo pasta to the pan and toast it lightly for about 2-3 minutes, stirring frequently until golden brown.
- Pour in the tomato sauce and vegetable broth, and add the chili powder, cumin, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 10-12 minutes, or until the pasta is cooked al dente.
- Once the pasta is cooked, gently fold in the shredded chicken and let it heat through for 2-3 minutes.
- Serve hot, garnished with fresh cilantro.
