Ingredients

  • Fideo pasta - 200 grams

  • Tomato sauce - 400 grams
  • Chicken breast - 150 grams, cooked and shredded
  • Vegetable broth - 500 ml
  • Chili powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the fideo pasta to the pan and toast it lightly for about 2-3 minutes, stirring frequently until golden brown.
  4. Pour in the tomato sauce and vegetable broth, and add the chili powder, cumin, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 10-12 minutes, or until the pasta is cooked al dente.
  6. Once the pasta is cooked, gently fold in the shredded chicken and let it heat through for 2-3 minutes.
  7. Serve hot, garnished with fresh cilantro.
