  • Olive oil - 1 tablespoon
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Chicken or vegetable broth - 500 milliliters
  • Greek yogurt - 100 grams
  • Cotija cheese (crumbled) - 100 grams
  • Monterey Jack cheese (shredded) - 100 grams
  • Fresh cilantro (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the fideos and toast them lightly in the saucepan for about 2-3 minutes, stirring constantly to prevent burning.
  4. Pour in the chicken or vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 10-12 minutes until the noodles are cooked and the liquid is mostly absorbed.
  5. Once cooked, remove from heat and stir in the Greek yogurt, crumbled Cotija cheese, and shredded Monterey Jack cheese until melted and creamy.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
