- Chicken breast - 300 grams, diced
- Fideos (thin pasta) - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 2 medium, diced
- Chicken broth - 500 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced tomatoes, cumin, paprika, salt, and pepper to the skillet. Cook for another 5 minutes until the tomatoes begin to break down.
- Stir in the fideos and return the chicken to the skillet. Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes, or until the fideos are tender and have absorbed most of the liquid.
- Remove from heat and stir in chopped cilantro. Serve hot with lime wedges on the side.
