Ingredients

  • Chicken breast - 300 grams, diced
  • Fideos (thin pasta) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 2 medium, diced
  • Chicken broth - 500 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
  2. In the same skillet, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the diced tomatoes, cumin, paprika, salt, and pepper to the skillet. Cook for another 5 minutes until the tomatoes begin to break down.
  4. Stir in the fideos and return the chicken to the skillet. Pour in the chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 10-12 minutes, or until the fideos are tender and have absorbed most of the liquid.
  6. Remove from heat and stir in chopped cilantro. Serve hot with lime wedges on the side.
