  • Onion - 1 small (finely chopped)
  • Bell pepper (any color) - 1/2 (finely chopped)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Vegetable broth - 500 milliliters
  • Lime - 1 (cut into wedges for serving)

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic, cumin, paprika, salt, and black pepper to the pot. Stir and cook for an additional 1-2 minutes until fragrant.
  3. Add the fideos to the pot and toast them in the oil and spices for about 2 minutes, stirring frequently.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the fideos are cooked and most of the liquid is absorbed.
  5. Stir in the black beans and chopped cilantro. Cook for an additional 2-3 minutes until heated through.
  6. Serve hot with lime wedges on the side for squeezing over the dish.
