  • Zucchini - 1 small, diced
  • Poblano pepper - 1 medium, roasted and diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
  2. Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5 minutes until tender.
  3. Stir in the roasted and diced poblano pepper and tomato, cooking for another 3 minutes until the tomatoes begin to break down.
  4. Add the fideos to the skillet, stirring to combine with the vegetables. Toast the pasta for about 2 minutes, stirring frequently.
  5. Pour in the vegetable broth, and add cumin, oregano, salt, and black pepper. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for about 10-12 minutes, or until the pasta is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.
  7. Remove from heat, garnish with fresh cilantro, and serve warm.
