- Garlic (minced) - 2 cloves
- Onion (finely chopped) - 1 small
- Tomato (diced) - 1 medium
- Chicken broth - 500 milliliters
- Green chili (sliced) - 1 medium
- Cilantro (chopped) - 2 tablespoons
- Salt - to taste
- Pepper - to taste
- Lime wedges - for serving
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the diced tomato and sliced green chili to the pot, cooking for another 2-3 minutes until the tomato softens.
- Stir in the fideos, coating them with the onion and tomato mixture. Cook for 1-2 minutes until the fideos are slightly toasted.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the fideos are cooked and have absorbed most of the liquid.
- While the fideos are cooking, chop the chicharrón into bite-sized pieces. In a small pan, heat the chicharrón over medium heat for about 5 minutes until crispy.
- Once the fideos are done, remove from heat and stir in the chopped cilantro. Season with salt and pepper to taste.
- Serve the fideos in bowls, topped with crispy chicharrón and lime wedges on the side for squeezing.
