Ingredients

  • Chicharrón (crispy pork cracklings) - 100 grams

  • Garlic (minced) - 2 cloves
  • Onion (finely chopped) - 1 small
  • Tomato (diced) - 1 medium
  • Chicken broth - 500 milliliters
  • Green chili (sliced) - 1 medium
  • Cilantro (chopped) - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Lime wedges - for serving

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  2. Add the diced tomato and sliced green chili to the pot, cooking for another 2-3 minutes until the tomato softens.
  3. Stir in the fideos, coating them with the onion and tomato mixture. Cook for 1-2 minutes until the fideos are slightly toasted.
  4. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the fideos are cooked and have absorbed most of the liquid.
  5. While the fideos are cooking, chop the chicharrón into bite-sized pieces. In a small pan, heat the chicharrón over medium heat for about 5 minutes until crispy.
  6. Once the fideos are done, remove from heat and stir in the chopped cilantro. Season with salt and pepper to taste.
  7. Serve the fideos in bowls, topped with crispy chicharrón and lime wedges on the side for squeezing.
