Ingredients

  • Fideos (thin pasta) - 200 grams
  • Carne Asada (flank steak) - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Bell pepper (any color) - 1, diced
  • Tomato - 1 medium, diced
  • Chicken broth - 500 milliliters
  • Chili powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Marinate the carne asada in lime juice, salt, black pepper, chili powder, and cumin for at least 15 minutes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the marinated carne asada and sear for about 3-4 minutes on each side until cooked to your desired doneness. Remove from skillet and let rest before slicing.
  3. In the same skillet, add the remaining tablespoon of olive oil. Sauté the onion and garlic until translucent, about 2-3 minutes.
  4. Add the bell pepper and tomato to the skillet, cooking for another 3-4 minutes until softened.
  5. Add the fideos to the skillet, stirring to coat with the vegetables. Toast the pasta for 2-3 minutes until slightly browned.
  6. Pour in the chicken broth and bring to a boil. Reduce heat to low and cover, cooking for about 8-10 minutes or until the pasta is tender and the broth is absorbed.
  7. Slice the rested carne asada against the grain and serve it over the fideos. Garnish with chopped cilantro before serving.
