- Carne Asada (flank steak) - 250 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Bell pepper (any color) - 1, diced
- Tomato - 1 medium, diced
- Chicken broth - 500 milliliters
- Chili powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Marinate the carne asada in lime juice, salt, black pepper, chili powder, and cumin for at least 15 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the marinated carne asada and sear for about 3-4 minutes on each side until cooked to your desired doneness. Remove from skillet and let rest before slicing.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the onion and garlic until translucent, about 2-3 minutes.
- Add the bell pepper and tomato to the skillet, cooking for another 3-4 minutes until softened.
- Add the fideos to the skillet, stirring to coat with the vegetables. Toast the pasta for 2-3 minutes until slightly browned.
- Pour in the chicken broth and bring to a boil. Reduce heat to low and cover, cooking for about 8-10 minutes or until the pasta is tender and the broth is absorbed.
- Slice the rested carne asada against the grain and serve it over the fideos. Garnish with chopped cilantro before serving.
