Steps
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
- Add the diced red bell pepper, cooking for an additional 2 minutes until slightly softened.
- Stir in the shrimp, paprika, cumin, salt, and black pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes.
- Pour in the tomato sauce and chicken broth, bringing the mixture to a simmer.
- Add the fideos to the skillet, stirring to combine. Cook for about 10-12 minutes, or until the fideos are tender and have absorbed most of the liquid.
