  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the diced zucchini and cook for about 5 minutes, until just tender.
  4. Add the diced tomato, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes soften.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Once boiling, add the fideos to the pot. Stir gently and reduce the heat to a simmer. Cook for about 8-10 minutes or until the fideos are al dente and have absorbed most of the broth.
  7. Remove from heat, adjust seasoning if necessary, and let it sit for a couple of minutes.
  8. Serve warm, garnished with fresh cilantro.
