- Zucchini - 1 medium (about 200 grams), diced

- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the diced zucchini and cook for about 5 minutes, until just tender.
- Add the diced tomato, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes soften.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the fideos to the pot. Stir gently and reduce the heat to a simmer. Cook for about 8-10 minutes or until the fideos are al dente and have absorbed most of the broth.
- Remove from heat, adjust seasoning if necessary, and let it sit for a couple of minutes.
- Serve warm, garnished with fresh cilantro.
