Steps

- Add the chopped tomatoes, cumin powder, chili powder, salt, and black pepper, cooking until the tomatoes break down (about 5 minutes).
- In a separate pot, toast the vermicelli pasta over medium heat, stirring frequently until lightly golden (about 3-4 minutes).
- Pour the vegetable broth into the skillet with the vegetables, then add the toasted vermicelli.
- Bring to a boil, then reduce heat to low, cover, and simmer until the pasta is cooked and has absorbed most of the liquid (about 10-12 minutes).
- Remove from heat, garnish with fresh cilantro, and serve warm.
