  • Chili powder - 1/2 teaspoon

  • Black pepper - to taste

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and diced onion, sautéing until the onion is translucent (about 3-4 minutes).
  3. Stir in the diced red bell pepper, zucchini, and carrot, cooking for another 5 minutes until the vegetables soften.
  4. Add the chopped tomatoes, cumin powder, chili powder, salt, and black pepper, cooking until the tomatoes break down (about 5 minutes).
  5. In a separate pot, toast the vermicelli pasta over medium heat, stirring frequently until lightly golden (about 3-4 minutes).
  6. Pour the vegetable broth into the skillet with the vegetables, then add the toasted vermicelli.
  7. Bring to a boil, then reduce heat to low, cover, and simmer until the pasta is cooked and has absorbed most of the liquid (about 10-12 minutes).
  8. Remove from heat, garnish with fresh cilantro, and serve warm.
