- Zucchini - 1 medium
- Red onion - 1 medium
- Mushrooms - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1 medium
- Fresh cilantro - 2 tablespoons
- Whole wheat tortillas - 4
Steps
- Wash and slice the bell peppers, zucchini, and red onion into thin strips. Clean and slice the mushrooms.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced vegetables to the skillet and cook for about 10-12 minutes, stirring occasionally, until they are tender but still crisp.
- Sprinkle the cumin, paprika, salt, and black pepper over the vegetables, stirring well to combine. Cook for an additional 2-3 minutes.
- Remove the skillet from heat and squeeze fresh lime juice over the cooked vegetables. Toss to coat.
- Warm the whole wheat tortillas in a dry skillet or microwave for a few seconds until pliable.
- Serve the sautéed vegetables in the warm tortillas, garnished with fresh cilantro.
