  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Mushrooms - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1 medium
  • Fresh cilantro - 2 tablespoons
  • Whole wheat tortillas - 4

Steps

  1. Wash and slice the bell peppers, zucchini, and red onion into thin strips. Clean and slice the mushrooms.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced vegetables to the skillet and cook for about 10-12 minutes, stirring occasionally, until they are tender but still crisp.
  4. Sprinkle the cumin, paprika, salt, and black pepper over the vegetables, stirring well to combine. Cook for an additional 2-3 minutes.
  5. Remove the skillet from heat and squeeze fresh lime juice over the cooked vegetables. Toss to coat.
  6. Warm the whole wheat tortillas in a dry skillet or microwave for a few seconds until pliable.
  7. Serve the sautéed vegetables in the warm tortillas, garnished with fresh cilantro.
