  • Onion - 1 medium, sliced
  • Salt - to taste

  • Flour tortillas - 4 pieces
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, mix the olive oil, soy sauce, lime juice, minced garlic, cumin, chili powder, salt, and black pepper to create a marinade.
  2. Slice the beef flank steak against the grain into thin strips and add it to the marinade. Let it marinate for at least 15 minutes.
  3. While the beef is marinating, slice the bell peppers and onion.
  4. Heat a large skillet over medium-high heat and add a little olive oil. Once hot, add the marinated beef strips and cook for about 5-7 minutes, stirring frequently until browned and cooked through.
  5. Add the sliced bell peppers and onion to the skillet with the beef and cook for an additional 5-7 minutes until the vegetables are tender but still crisp.
  6. Warm the flour tortillas in another skillet or microwave, then fill each tortilla with the beef and vegetable mixture.
  7. Garnish with fresh cilantro before serving.
