- Bell pepper (red) - 1 medium, sliced
- Bell pepper (green) - 1 medium, sliced
- Onion - 1 medium, sliced

- Flour tortillas - 4 pieces
- Fresh cilantro - for garnish
Steps
- In a bowl, mix the olive oil, soy sauce, lime juice, minced garlic, cumin, chili powder, salt, and black pepper to create a marinade.
- Slice the beef flank steak against the grain into thin strips and add it to the marinade. Let it marinate for at least 15 minutes.
- While the beef is marinating, slice the bell peppers and onion.
- Heat a large skillet over medium-high heat and add a little olive oil. Once hot, add the marinated beef strips and cook for about 5-7 minutes, stirring frequently until browned and cooked through.
- Add the sliced bell peppers and onion to the skillet with the beef and cook for an additional 5-7 minutes until the vegetables are tender but still crisp.
- Warm the flour tortillas in another skillet or microwave, then fill each tortilla with the beef and vegetable mixture.
- Garnish with fresh cilantro before serving.
