Ingredients

  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell pepper (mixed colors) - 1 medium (about 150g)
  • Onion - 1 medium (about 100g)
  • Tortillas (flour or corn) - 4 small
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1/2 medium, sliced
  • Sour cream or yogurt - 2 tablespoons (optional)

Steps

  1. Clean the portobello mushrooms with a damp cloth and remove the stems.
  2. In a bowl, mix olive oil, lime juice, garlic powder, cumin, smoked paprika, salt, and black pepper to create the marinade.
  3. Add the portobello mushrooms to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. While the mushrooms marinate, slice the bell pepper and onion into thin strips.
  5. Heat a grill pan or skillet over medium-high heat. Add the marinated mushrooms and cook for about 5-7 minutes on each side until tender and slightly charred.
  6. Remove the mushrooms from the pan and let them rest for a minute before slicing them into strips.
  7. In the same pan, add the sliced bell pepper and onion. Sauté for about 5 minutes until they are soft and slightly caramelized.
  8. Warm the tortillas in a separate pan or microwave for a few seconds until pliable.
  9. To assemble, place a few strips of portobello mushrooms and sautéed vegetables onto each tortilla. Top with fresh cilantro, avocado slices, and sour cream if desired.
