Ingredients

  • 200g chicken breast - diced
  • 1 medium bell pepper (any color) - sliced
  • 1 small onion - sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and pepper - to taste
  • 100g shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons fresh cilantro - chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil and sauté the diced chicken until cooked through, about 5-7 minutes.
  3. Add the sliced bell pepper and onion to the skillet with the chicken. Sauté for another 5 minutes until the vegetables are slightly softened.
  4. Sprinkle the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper over the chicken and vegetables. Stir well to combine and cook for an additional 2 minutes.
  5. Transfer the chicken and vegetable mixture to a baking dish. Top evenly with the shredded cheese.
  6. Drizzle the remaining tablespoon of olive oil over the cheese, then bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
