Ingredients
- 200g chicken breast - diced
- 1 medium bell pepper (any color) - sliced
- 1 small onion - sliced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and pepper - to taste
- 100g shredded cheese (cheddar or Mexican blend)
- 2 tablespoons fresh cilantro - chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a large skillet over medium heat, add 1 tablespoon of olive oil and sauté the diced chicken until cooked through, about 5-7 minutes.
- Add the sliced bell pepper and onion to the skillet with the chicken. Sauté for another 5 minutes until the vegetables are slightly softened.
- Sprinkle the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper over the chicken and vegetables. Stir well to combine and cook for an additional 2 minutes.
- Transfer the chicken and vegetable mixture to a baking dish. Top evenly with the shredded cheese.
- Drizzle the remaining tablespoon of olive oil over the cheese, then bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro before serving.
