Ingredients

  • Cauliflower florets - 200 grams
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cotija cheese - 30 grams, crumbled
  • Mayonnaise - 1 tablespoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, toss the cauliflower florets with olive oil, salt, and black pepper until evenly coated.
  3. Spread the cauliflower on a baking sheet and roast in the oven for 15-20 minutes, or until tender and lightly browned.
  4. Remove the cauliflower from the oven and let it cool slightly.
  5. In a separate bowl, mix the roasted cauliflower with lime juice, mayonnaise, crumbled Cotija cheese, chili powder, and chopped cilantro.
