Ingredients

  • Zucchini - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Canned diced tomatoes - 400 grams
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Red chili flakes - 1/4 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodle-like strands.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  4. Pour in the canned diced tomatoes, along with the dried oregano, red chili flakes (if using), and season with salt and black pepper. Stir well and let the sauce simmer for 10-15 minutes, allowing the flavors to meld.
  5. Add the chopped fresh basil to the sauce and stir to combine.
  6. In a separate pot, bring water to a boil and add the spiralized zucchini noodles. Cook for 2-3 minutes until just tender, then drain.
  7. Serve the zucchini noodles topped with the tomato sauce, garnishing with additional fresh basil if desired.
