Ingredients

  • Firm tofu - 200 grams
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 small, diced
  • Red onion - 1/4 medium, diced
  • Bell pepper (any color) - 1/2, diced
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1 small, diced

Steps

  1. Press the tofu to remove excess moisture for about 15 minutes, then cut it into cubes.
  2. In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, salt, and black pepper.
  3. Add the tofu cubes to the marinade and let them sit for 10 minutes.
  4. While the tofu is marinating, prepare the vegetables by dicing the cucumber, bell pepper, and red onion, and halving the cherry tomatoes.
  5. In a non-stick skillet over medium heat, add the marinated tofu and cook for about 10 minutes, turning occasionally until golden brown.
  6. In a large bowl, combine the cooked tofu, prepared vegetables, and chopped cilantro.
  7. Gently fold in the diced avocado just before serving.
  8. Serve immediately, drizzled with any leftover marinade if desired.
