- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 small, diced
- Red onion - 1/4 medium, diced
- Bell pepper (any color) - 1/2, diced
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1 small, diced
Steps
- Press the tofu to remove excess moisture for about 15 minutes, then cut it into cubes.
- In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, salt, and black pepper.
- Add the tofu cubes to the marinade and let them sit for 10 minutes.
- While the tofu is marinating, prepare the vegetables by dicing the cucumber, bell pepper, and red onion, and halving the cherry tomatoes.
- In a non-stick skillet over medium heat, add the marinated tofu and cook for about 10 minutes, turning occasionally until golden brown.
- In a large bowl, combine the cooked tofu, prepared vegetables, and chopped cilantro.
- Gently fold in the diced avocado just before serving.
- Serve immediately, drizzled with any leftover marinade if desired.
