Ingredients

  • Green peas - 100 grams
  • Red onion - 50 grams

  • Lime juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Avocado - 1 medium, diced

Steps

  1. Wash and peel the potatoes and carrots, then cut them into small cubes.
  2. In a large pot, bring water to a boil and add the potato cubes. Cook for about 10 minutes.
  3. After 10 minutes, add the carrot cubes and green peas to the pot. Cook for an additional 5 minutes until all vegetables are tender.
  4. Drain the vegetables and let them cool for about 10 minutes.
  5. In a mixing bowl, combine the cooled potatoes, carrots, green peas, and finely chopped red onion.
  6. In a separate small bowl, whisk together the olive oil, lime juice, salt, and black pepper to create the dressing.
