Ingredients

  • Asparagus - 200 grams
  • Cherry tomatoes - 150 grams
  • Red onion - 50 grams
  • Fresh cilantro - 20 grams
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Queso fresco - 50 grams, crumbled

Steps

  1. Trim the tough ends off the asparagus and cut them into 5 cm pieces.
  2. Bring a pot of salted water to a boil and blanch the asparagus pieces for 2-3 minutes until bright green and tender-crisp.
  3. Drain the asparagus and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for 2 minutes, then drain again.
  4. In a large mixing bowl, combine the blanched asparagus, halved cherry tomatoes, finely sliced red onion, and chopped cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper to create the dressing.
  6. Pour the dressing over the salad and toss gently to combine all the ingredients.
