  • Cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Queso fresco - 50 grams, crumbled (optional)

Steps

  1. Cook the corn by bringing a pot of water to a boil. Add the corn ears and cook for about 5-7 minutes until tender. Remove from water and let cool.
  2. Once the corn is cool enough to handle, cut the kernels off the cob and place them in a large mixing bowl.
  3. Add the diced red bell pepper, chopped green onion, and cilantro to the bowl with the corn.
  4. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper to make the dressing.
  5. Pour the dressing over the corn and vegetable mixture, tossing to combine thoroughly.
