Steps
- Bring a pot of water to a boil. Add the chayote and cook for about 5 minutes, or until tender but still crisp. Drain and let it cool.
- Once cooled, cut the chayote in half, remove the pit, and slice it into thin strips.
- In a large bowl, combine the sliced chayote, halved cherry tomatoes, thinly sliced red onion, and chopped cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
