Ingredients

  • Lime - 1, juiced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 medium, diced

Steps

  1. Bring a pot of water to a boil. Add the chayote and cook for about 5 minutes, or until tender but still crisp. Drain and let it cool.
  2. Once cooled, cut the chayote in half, remove the pit, and slice it into thin strips.
  3. In a large bowl, combine the sliced chayote, halved cherry tomatoes, thinly sliced red onion, and chopped cilantro.
  4. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients.
