Ingredients

  • Beets - 2 medium-sized
  • Avocado - 1 ripe
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Red onion - 1/4, thinly sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the beets individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until tender when pierced with a fork.
  3. Once the beets are cooked, remove them from the oven and let them cool slightly. Once cool enough to handle, peel the beets and cut them into wedges.
  4. In a bowl, combine lime juice, olive oil, salt, and black pepper to make a dressing.
  5. In a serving platter, arrange the beet wedges, sliced red onion, and chopped cilantro.
  6. Drizzle the dressing over the salad and toss gently to combine.
  7. Slice the avocado and arrange it on top of the salad, then sprinkle with crumbled feta cheese if using.
  8. Serve immediately, garnished with additional cilantro if desired.
