- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
- Red onion - 1/4, thinly sliced
Steps
- Preheat the oven to 200°C (400°F).
- Wrap the beets individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until tender when pierced with a fork.
- Once the beets are cooked, remove them from the oven and let them cool slightly. Once cool enough to handle, peel the beets and cut them into wedges.
- In a bowl, combine lime juice, olive oil, salt, and black pepper to make a dressing.
- In a serving platter, arrange the beet wedges, sliced red onion, and chopped cilantro.
- Drizzle the dressing over the salad and toss gently to combine.
