- Corn tortillas - 4
- Fresh spinach - 150 grams
- Ricotta cheese - 100 grams
- Shredded mozzarella cheese - 100 grams
- Tomatillo sauce - 200 ml
- Sour cream - 50 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the fresh spinach to the skillet and cook until wilted. Season with salt and pepper, then remove from heat.
- In a bowl, combine the wilted spinach mixture with ricotta cheese and half of the shredded mozzarella. Mix well.
- Warm the corn tortillas briefly in a pan or microwave to make them pliable.
- Fill each tortilla with a generous amount of the spinach and cheese mixture, rolling them tightly into enchiladas.
- Place the rolled enchiladas in a baking dish, seam side down. Pour the tomatillo sauce evenly over the enchiladas.
- Sprinkle the remaining mozzarella cheese on top of the enchiladas.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with a dollop of sour cream and chopped cilantro.
