Ingredients

  • Corn tortillas - 4
  • Fresh spinach - 150 grams
  • Ricotta cheese - 100 grams
  • Shredded mozzarella cheese - 100 grams
  • Tomatillo sauce - 200 ml
  • Sour cream - 50 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the fresh spinach to the skillet and cook until wilted. Season with salt and pepper, then remove from heat.
  4. In a bowl, combine the wilted spinach mixture with ricotta cheese and half of the shredded mozzarella. Mix well.
  5. Warm the corn tortillas briefly in a pan or microwave to make them pliable.
  6. Fill each tortilla with a generous amount of the spinach and cheese mixture, rolling them tightly into enchiladas.
  7. Place the rolled enchiladas in a baking dish, seam side down. Pour the tomatillo sauce evenly over the enchiladas.
  8. Sprinkle the remaining mozzarella cheese on top of the enchiladas.
  9. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  10. Serve hot, garnished with a dollop of sour cream and chopped cilantro.
