- Corn tortillas - 4
- Oaxaca cheese - 150 grams, shredded
- Queso fresco - 50 grams, crumbled
- Vegetable oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato sauce - 240 ml
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and cumin, cooking for an additional minute until fragrant.
- Pour in the tomato sauce and stir well. Season with salt and black pepper to taste, then let simmer for 5 minutes.
- Warm the corn tortillas in another skillet or microwave to make them pliable.
- Spread a small amount of the tomato sauce on the bottom of a baking dish.
- Take a tortilla, fill it with a mix of Oaxaca cheese and a bit of cilantro, then roll it up and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
- Once all the tortillas are in the dish, pour the remaining tomato sauce over the top and sprinkle with crumbled queso fresco.
- Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.
- Remove from the oven, garnish with additional cilantro, and serve hot.
