Ingredients

  • Corn tortillas - 4
  • Cooked chicken breast, shredded - 200 grams
  • Red enchilada sauce - 200 ml
  • Low-fat cheese, shredded - 100 grams
  • Greek yogurt - 50 grams
  • Chopped cilantro - 2 tablespoons
  • Diced onion - 1/4 cup
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté diced onion until translucent, about 3-4 minutes.
  3. Add shredded chicken to the skillet, season with salt and pepper, and stir until heated through, about 2-3 minutes.
  4. Warm the corn tortillas in a dry skillet or microwave until pliable.
  5. Spread a spoonful of enchilada sauce on a plate. Take a tortilla, fill it with the chicken mixture, roll it tightly, and place it seam-side down in the sauce-covered plate.
  6. Repeat with the remaining tortillas and chicken mixture.
  7. Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle shredded cheese on top.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, top with Greek yogurt and chopped cilantro before serving.
