- Cooked chicken breast, shredded - 200 grams
- Red enchilada sauce - 200 ml
- Low-fat cheese, shredded - 100 grams
- Greek yogurt - 50 grams
- Chopped cilantro - 2 tablespoons
- Diced onion - 1/4 cup
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté diced onion until translucent, about 3-4 minutes.
- Add shredded chicken to the skillet, season with salt and pepper, and stir until heated through, about 2-3 minutes.
- Warm the corn tortillas in a dry skillet or microwave until pliable.
- Spread a spoonful of enchilada sauce on a plate. Take a tortilla, fill it with the chicken mixture, roll it tightly, and place it seam-side down in the sauce-covered plate.
- Repeat with the remaining tortillas and chicken mixture.
- Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle shredded cheese on top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, top with Greek yogurt and chopped cilantro before serving.
