  • Crab meat, cooked - 100 grams
  • Green bell pepper, diced - 1/2
  • Red onion, diced - 1/4
  • Garlic, minced - 2 cloves
  • Cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green salsa (store-bought or homemade) - 200 grams
  • Sour cream - for serving (optional)
  • Avocado, sliced - for serving (optional)

Steps

  1. In a skillet, heat olive oil over medium heat. Add the diced red onion, green bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink. Stir in the crab meat, lime juice, chopped cilantro, salt, and black pepper. Cook for an additional 2 minutes until heated through.
  3. In a separate pan, warm the corn tortillas for about 30 seconds on each side until pliable.
  4. To assemble the enchiladas, place a portion of the seafood mixture in the center of each tortilla, roll them up tightly, and place seam-side down in a baking dish.
  5. Pour the green salsa evenly over the enchiladas, covering them completely.
  6. Bake in a preheated oven at 180°C (350°F) for 10-15 minutes until heated through.
  7. Serve hot, topped with sour cream and sliced avocado if desired.
