  • Whole wheat pizza dough - 200 grams
  • Black beans - 1 cup, cooked and drained
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, diced
  • Corn - 1/2 cup, frozen or canned
  • Enchilada sauce - 1/2 cup
  • Dairy-free cheese - 1 cup, shredded
  • Avocado - 1 small, sliced
  • Cilantro - 1/4 cup, chopped
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Roll out the whole wheat pizza dough on a floured surface to fit a 12-inch pizza pan.
  3. Transfer the rolled dough to the pizza pan and brush it lightly with olive oil.
  4. Spread the enchilada sauce evenly over the pizza dough.
  5. In a bowl, combine the black beans, red bell pepper, red onion, corn, lime juice, salt, and black pepper.
  6. Evenly distribute the bean and vegetable mixture over the enchilada sauce on the pizza.
  7. Sprinkle the dairy-free cheese on top of the vegetable mixture.
  8. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
