Ingredients
- All-purpose flour - 150 grams
- Unsalted butter - 50 grams, cold and cubed
- Salt - 1/2 teaspoon
- Water - 60 ml, ice-cold
- Queso Oaxaca or mozzarella cheese - 150 grams, shredded
- Cotija cheese - 50 grams, crumbled
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the all-purpose flour and salt, then add the cold cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add the ice-cold water, mixing until a dough forms. Knead gently for about 1-2 minutes, then wrap in plastic wrap and refrigerate for 30 minutes.
- In another bowl, mix the shredded cheese, crumbled Cotija cheese, and black pepper until well combined.
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Roll out the chilled dough on a floured surface to about 3 mm thick. Cut out circles of about 10 cm in diameter.
- Place about 2 tablespoons of the cheese mixture in the center of each circle, then fold the dough over to create a half-moon shape. Press the edges together to seal and crimp with a fork.
- Brush the tops of the empanadas with the beaten egg for a golden finish.
- Arrange the empanadas on the prepared baking sheet and bake for 20-25 minutes or until golden brown.
- Remove from oven and let cool slightly before serving.
