Ingredients

  • All-purpose flour - 250 grams
  • Butter (unsalted) - 50 grams, softened
  • Salt - 1/2 teaspoon
  • Cold water - 100 milliliters
  • Cooked chicken (shredded) - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper (red or green) - 1/2, finely chopped
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Egg (for egg wash) - 1, beaten

Steps

  1. In a mixing bowl, combine the flour and salt. Add the softened butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until the dough forms a ball. Cover with plastic wrap and refrigerate for 30 minutes.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion, garlic, and bell pepper, sautéing until softened, about 5 minutes.
  4. Stir in shredded chicken, cumin, chili powder, and black pepper. Cook until heated through. Remove from heat and let it cool.
  5. Preheat the oven to 200°C (400°F).
  6. Roll out the dough on a floured surface to about 3 mm thickness. Cut out circles (about 10 cm in diameter) using a cookie cutter or a glass.
  7. Place a tablespoon of the chicken filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Crimp the edges with a fork.
  8. Brush the tops of the empanadas with the beaten egg for a golden finish.
  9. Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  10. Remove from the oven and let cool for a few minutes before serving.
