Ingredients
- All-purpose flour - 250 grams
- Butter (unsalted) - 50 grams, softened
- Salt - 1/2 teaspoon
- Cold water - 100 milliliters
- Cooked chicken (shredded) - 150 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper (red or green) - 1/2, finely chopped
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Egg (for egg wash) - 1, beaten
Steps
- In a mixing bowl, combine the flour and salt. Add the softened butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until the dough forms a ball. Cover with plastic wrap and refrigerate for 30 minutes.
- In a skillet, heat olive oil over medium heat. Add chopped onion, garlic, and bell pepper, sautéing until softened, about 5 minutes.
- Stir in shredded chicken, cumin, chili powder, and black pepper. Cook until heated through. Remove from heat and let it cool.
- Preheat the oven to 200°C (400°F).
- Roll out the dough on a floured surface to about 3 mm thickness. Cut out circles (about 10 cm in diameter) using a cookie cutter or a glass.
- Place a tablespoon of the chicken filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Crimp the edges with a fork.
- Brush the tops of the empanadas with the beaten egg for a golden finish.
- Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
