Ingredients
- All-purpose flour - 150 grams
- Coconut oil - 50 grams
- Agave syrup - 30 ml
- Salt - 1/4 teaspoon
- Cold water - 60 ml
- Seasonal fruit (such as apples or peaches) - 200 grams, diced
- Cinnamon - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Powdered sugar - for dusting (optional)
Steps
- In a mixing bowl, combine the all-purpose flour and salt.
- Add the coconut oil and agave syrup, mixing until crumbly.
- Gradually add the cold water, mixing until a dough forms. Knead gently for a few minutes.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In another bowl, combine the diced seasonal fruit, lemon juice, and cinnamon. Set aside.
- Preheat your oven to 180°C (350°F).
- Roll out the chilled dough on a floured surface to about 3 mm thick.
- Cut out circles of dough, approximately 10 cm in diameter.
- Place a spoonful of the fruit mixture in the center of each circle.
- Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges.
- Arrange the empanadas on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
- Allow to cool slightly before dusting with powdered sugar, if desired, and serve warm.
