Ingredients

  • All-purpose flour - 150 grams
  • Coconut oil - 50 grams
  • Agave syrup - 30 ml
  • Salt - 1/4 teaspoon
  • Cold water - 60 ml
  • Seasonal fruit (such as apples or peaches) - 200 grams, diced
  • Cinnamon - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Powdered sugar - for dusting (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt.
  2. Add the coconut oil and agave syrup, mixing until crumbly.
  3. Gradually add the cold water, mixing until a dough forms. Knead gently for a few minutes.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. In another bowl, combine the diced seasonal fruit, lemon juice, and cinnamon. Set aside.
  6. Preheat your oven to 180°C (350°F).
  7. Roll out the chilled dough on a floured surface to about 3 mm thick.
  8. Cut out circles of dough, approximately 10 cm in diameter.
  9. Place a spoonful of the fruit mixture in the center of each circle.
  10. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges.
  11. Arrange the empanadas on a baking sheet lined with parchment paper.
  12. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  13. Allow to cool slightly before dusting with powdered sugar, if desired, and serve warm.
