Ingredients
- Cauliflower - 300 grams (for crust)
- Shredded mozzarella cheese - 150 grams
- Egg - 1 large
- Almond flour - 40 grams
- Corn (cooked, kernels) - 100 grams
- Cotija cheese - 30 grams (crumbled)
- Sour cream - 50 grams
- Fresh cilantro - 2 tablespoons (chopped)
- Lime - 1 (juiced and zested)
- Chili powder - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
Steps
- Preheat your oven to 220°C (428°F).
- Rinse and steam the cauliflower until tender, then let it cool slightly.
- Once cooled, chop the cauliflower finely or pulse it in a food processor until it resembles rice.
- In a bowl, combine the processed cauliflower, 100 grams of mozzarella cheese, egg, almond flour, garlic powder, salt, and pepper to form a dough.
- Spread the dough onto a baking sheet lined with parchment paper, forming a round pizza shape about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden brown.
- While the crust is baking, mix the cooked corn with lime juice, lime zest, chili powder, and half of the chopped cilantro in a bowl.
- Once the crust is done, remove it from the oven and spread the sour cream evenly over the top.
- Sprinkle the corn mixture over the sour cream, then top with the remaining mozzarella cheese and crumbled Cotija cheese.
- Return the pizza to the oven and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
- Remove from the oven, garnish with the remaining cilantro, and serve hot.
