Ingredients

  • Sweet corn cobs - 2
  • Unsalted butter - 30 grams
  • Mayonnaise - 30 grams
  • Cotija cheese - 40 grams, crumbled
  • Fresh cilantro - 10 grams, chopped
  • Lime - 1, cut into wedges
  • Chili powder - 1 teaspoon
  • Salt - to taste

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. Husk the sweet corn cobs, removing all silk and debris.
  3. Place the corn cobs on the grill and cook for about 10-12 minutes, turning occasionally, until the corn is tender and has grill marks.
  4. While the corn is grilling, melt the butter in a small bowl.
  5. Once the corn is done, remove it from the grill and brush each cob with melted butter.
  6. Spread mayonnaise evenly over each corn cob.
  7. Sprinkle crumbled Cotija cheese generously over the mayo-coated corn.
  8. Add chopped cilantro and a pinch of chili powder to each cob, adjusting the amount to your spice preference.
  9. Serve immediately with lime wedges on the side for squeezing over the corn.
