Steps

  1. In a small saucepan, combine tamarind pulp, sugar, water, and salt. If you like a spicy kick, add the chili powder.
  2. Cook over medium heat, stirring constantly until the mixture thickens and pulls away from the sides of the pan, about 10-15 minutes.
  3. Once thickened, remove from heat and let cool slightly until manageable.
  4. Dust a clean surface with cornstarch, then transfer the tamarind mixture onto it.
  5. Knead the mixture gently for a minute, then shape it into a log or cut it into small pieces.
