Ingredients
- Quince - 500 grams
- Sugar - 200 grams
- Lemon juice - 2 tablespoons
- Water - 250 ml
Steps
- Wash the quince thoroughly, then cut them into quarters without peeling.
- In a pot, combine the quince quarters and water. Bring to a boil and simmer for about 30 minutes until the quince is soft.
- Remove the pot from heat and let the quince cool slightly. Once cool enough to handle, strain the quince, reserving the cooking liquid.
- Puree the quince in a blender or food processor until smooth.
- In a clean pot, combine the quince puree, sugar, lemon juice, and 100 ml of the reserved cooking liquid.
- Cook the mixture over low heat, stirring constantly to prevent sticking, until it thickens and pulls away from the sides of the pot, about 30-40 minutes.
- Pour the thickened mixture into a mold or a shallow dish lined with parchment paper. Allow it to cool completely at room temperature, then refrigerate for at least 2 hours to set.
- Once set, cut into squares or slices and serve as desired.
