Ingredients

  • Quince - 500 grams
  • Sugar - 200 grams
  • Lemon juice - 2 tablespoons
  • Water - 250 ml

Steps

  1. Wash the quince thoroughly, then cut them into quarters without peeling.
  2. In a pot, combine the quince quarters and water. Bring to a boil and simmer for about 30 minutes until the quince is soft.
  3. Remove the pot from heat and let the quince cool slightly. Once cool enough to handle, strain the quince, reserving the cooking liquid.
  4. Puree the quince in a blender or food processor until smooth.
  5. In a clean pot, combine the quince puree, sugar, lemon juice, and 100 ml of the reserved cooking liquid.
  6. Cook the mixture over low heat, stirring constantly to prevent sticking, until it thickens and pulls away from the sides of the pot, about 30-40 minutes.
  7. Pour the thickened mixture into a mold or a shallow dish lined with parchment paper. Allow it to cool completely at room temperature, then refrigerate for at least 2 hours to set.
  8. Once set, cut into squares or slices and serve as desired.
