Ingredients

  • Corn tortillas - 4 pieces
  • Vegetable oil - 120 ml (1/2 cup)
  • Refried black beans - 200 g (1 cup)
  • Ripe avocado - 1 medium, sliced
  • Cherry tomatoes - 150 g, halved
  • Red onion - 50 g, finely chopped
  • Fresh cilantro - 10 g, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Salsa verde - 100 g (about 1/2 cup)

Steps

  1. In a deep frying pan, heat the vegetable oil over medium heat.
  2. Once the oil is hot, carefully add the corn tortillas one at a time, frying each side for about 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels.
  3. In a small bowl, mix the refried black beans with a pinch of salt and pepper to taste.
  4. Spread a generous layer of refried black beans onto each crispy tortilla.
  5. Top the beans with sliced avocado, halved cherry tomatoes, and chopped red onion.
  6. Drizzle with lime juice and sprinkle with fresh cilantro.
  7. Add a spoonful of salsa verde on top of each tostada.
