Ingredients

  • Ripe plantains - 2 medium
  • Vegetable oil - 1 cup
  • Salt - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Lime juice - 1 tablespoon

Steps

  1. Peel the ripe plantains and slice them thinly into 1/8-inch rounds.
  2. In a large bowl, combine the sliced plantains with lime juice, salt, and chili powder. Toss well to ensure the slices are evenly coated.
  3. Heat the vegetable oil in a deep skillet over medium-high heat until it reaches 180°C (350°F).
  4. Carefully add a handful of plantain slices to the hot oil, making sure not to overcrowd the pan.
  5. Fry the plantains for about 2-3 minutes or until they turn golden brown and crispy, flipping them halfway through.
  6. Use a slotted spoon to remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
  7. Repeat the frying process with the remaining plantain slices.
  8. Serve the crispy plantain chips warm or at room temperature, optionally with your favorite dipping sauce.
